A great friend of mine, Britany Galbraith, said this to a client once, and it’s stuck with me ever since: Wines are like people. To grow old, they need strong and healthy bones. The bones of the wine are found in the structure: tannin, acidity, sweetness, and alcohol. To get the absolute most out of aging, look to these structural elements plus balance, length, and complexity. If a wine is checking any or all of these boxes, the wine is potentially worthy of aging.
